This post will be short and sweet because I have some relaxing to do and wine to imbibe with my husband!
I was up before the sun on a quest for caffeine because our Nespresso order was delayed so we were completely OUT of coffee. Never a good thing with so much to do and so little time (plus two non-stop boys). I hit the drive thru and on my way back I caught the beginning of a beautiful fiery, autumnal Colorado sunrise. It blew me away and reminded me that we need to slow down and enjoy being present. Ironic right? Going to get coffee to fuel up my energy and thinking to myself "oh you need to slow down". Funny.
Needless to say, I stepped away from the computer/blog building confusion and into the kitchen for most of the day (for those who were following along on social media, you got the preview for recipes to come!) I made a sinfully delicious roasted chicken and potato cast iron bake that was cooked in garlic infused duck fat. I know. It took some deep reserved willpower not to dig in and save it for dinner. Maple Roasted Acorn Squash stuffed with Farro, Bacon, and Dried Cranberries.. Cherry Chocolate Chunk muffins...Blueberry Crumb muffins... SO MUCH FOOD! It was a great day.
