Pomodoro Sauce

Even after the September Snow Storm we had here in Colorado, during the end of the Summer, causing three days of freezing weather(!) Our little garden still continued to produce so many tomatoes (& peppers!). Well, we finally harvested the last that the plants will yield for the season and all of the beautiful Golden Heirlooms, deep ruby Cherry Tomatoes, and so many other varieties & colors of tomatoes, I wanted to make something where their flavor would shine. Pomodoro is a simple, rustic Italian sauce that really showcases the fruit with just a few other ingredients. I served this with Gnocchi but you can easily substitute any pasta, use it as a sauce to poach white fish filets or just sop up all of its goodness with shoes! (Aka pieces of bread that you dip into the sauce- the shoes!). This is one recipe that you don't want to skip on using Fresh Tomatoes!



Ingredients:


Yields about 1 quart of Pomodoro Sauce


4 cups Fresh Tomatoes; Roughly Chopped

2 Tbsp. Butter

1 Large Yellow onion; Diced

4 Cloves of Garlic; minced

1 Bay Leaf

2 Tbsp. Olive Oil

1 Cup of Water

1 tsp. Dried Oregano

1 tbsp. Fresh Basil; torn in to smaller pieces

Salt and Pepper


  1. In a large heavy bottom pot or Dutch Oven; turn heat to medium and add Olive Oil & Onions. Cook the onions, stirring occasionally until they become translucent and melted a bit. If they start to turn brown, turn heat down.

  2. Add Garlic and stir for 1-2 minutes.

  3. Next, add the Chopped Tomatoes, Bay Leaf, Oregano and Butter. Stir and add the cup of Water. Reduce heat to a simmer on low.

  4. Let cook for at least 30-60 minutes for the flavors to marry and the water to reduce. (The finished sauce is a chunky thinner consistency). Season with Salt and Pepper to taste and add torn Basil right before serving.

  5. Enjoy!



I hope you make this and love it as much as I do! It is so so easy to cook and the Tomato flavor with just a bit of the silky fat from the butter, really make this sauce ultra satisfying.
