Is there a more iconic flavor profile than Chocolate and Peanut Butter!? These crisp and chewy Peanut butter Cookies with the prefect bite of Chocolate on top are a HOLIDAY STAPLE in our house. We make them for Halloween, Thanksgiving and of course, Christmas. They are a total crowd pleaser and are always the first to go on the cookie platters. The best part is- they are easy and my son Jamason is a master at unwrapping the kisses. A little tip is to make sure you have the right amount (or more in case someone sneaks eating one or two!) Chocolate Kisses unwrapped BEFORE the cookies get out of the oven. This way as soon as they come out, you can top each cookie with the kiss and it melts slightly just enough to stick perfectly in the center while the cookies cool.
Peanut Butter Cookies
yields about 2 dozen cookies
Ingredients:
1/2 Cup Butter
2/3 Cup Brown Sugar
1/3 Cup Granulated Sugar
1 tsp. Vanilla Extract
1/2 tsp. Salt
1 Egg
1 1/2 Cups All Purpose Flour
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda

Sprinkles
Preheat oven to 350 degrees.
In a Standing Mixer, combine sugar and butter on medium low with paddle attachment until light and fluffy.
Add egg, vanilla extract and salt until well combined.
In a large bowl, sift flour, baking powder and baking soda together and with the mixer on low, gradually add the dry ingredients to the wet ingredients until just incorporated.
On cookie sheets lined with silmats or parchment paper, scoop one inch balls about 2" apart.
Sprinkle with desired toppings- I like to put the sprinkles in a small bowl and roll the balls around then put them back on the cookie sheet.
Bake for 10-12 minutes until the cookies begin to crinkle on top; careful not to over cook as you want them to be crisp on the edges but chewy in the middle.
Remove from the oven and immediately place one kiss per cookie. Let the cookies settle after 1 minute then you can transfer them to a cooling rack. ***The kisses will take a bit to set again after being melted a bit so to speed this up just place cookies in the refrigerator if you need them to cool faster.
