Mexican Fiestas, Movie Nights & Recipe writing ✨

I hope you all had an amazing weekend! Ours was full of Mexican Food, Movies, Hiking annnnd I’ve been working hard to get some recipes written for you all. My kids love to dance and get down so Sing, the kids movie, has been a big hit in this house. But I’ll tell you, I welcomed the change to Moana this weekend! This time of year though, I can’t get enough scary movies in. (Sans the kiddos, of course). If it’s B-List- even better. The Lost Boys is a must and makes me want spaghetti and meatballs with extra garlic. And if I am having red wine night on a chilly night, I love watching Interview with a Vampire. But this weekend we took full advantage of the (hopefully last of) warmer weather, hiking and making some killer Mexican food.

Luckily Jamason, my older son who’s 7 has recently taken a liking for tacos and queso (I know right, what took him so long!?) Because if we could eat tacos every week, multiple times a week, we would.. and sometimes do! Haha. So planning for our fiesta came pretty naturally. I woke up early Saturday, prepped the Pork Shoulder in the slow cooker, we had a light breakfast and went out for a walk, then we hit a local brewery and picked up a few of our favorite beers; Cactus Sour Ales a.k.a. Cactus Juice. We made homemade corn tortillas together, and the best part is, most of the cooking and prep for all of this seems like a lot, because it’s all from scratch, it’s really not. We spread the feast out throughout the day and everyone helped. (A.k.a. Timy and I did dishes periodically so the kitchen stayed clean). ONE OF MY BIGGEST PET PEEVES!

Needless to say, it was a great weekend and I can’t wait to share these recipes with you so you can plan your own fiesta!

I feel like I can create and adapt my recipes so easily while I’m in motion but translating that flow to type doesn’t come quite as easily! I‘m working on writing as I cook, to help me record any adjustments I make and tips to share about process. I look forward to when you recreate the food and I invite any & all feedback to help me. I have been learning to use the camera more, playing with light, background & plating. It’s SO FUN!!
