Healthy Avocado & Fresh Dill Dressing

I can and will put this deliciously healthy, creamy green goodness on everything I eat. It is so fresh and tasty and paired beautifully with the Shrimp & Grapefruit Salad I made yesterday. It added a richness from the Avocado and the herbaceous Dill flavor helped tame the bitterness from the Grapefruit. It was a Super Simple Winner Salad in my book (& definitely check back for the recipe coming ASAP!)

But the possibilities for this "dressing" go far beyond just a salad. You can use it as a sauce for Grilled Salmon, a Dip for Veggies and Naan or even a side for spicy Buffalo Wings at the next football party. You’ll want to blend this up often and I guarantee you won’t feel guilty about putting it on everything because it is so healthy!



Ingredients: yields about 1-1/2 cups


1 Large Ripe Avocado

2 Cloves of Garlic

Juice from 1 Lemon

A handful of Fresh Dill; about 3-4 tbsp.

1 tsp. Red Wine Vinegar

1/4 Olive Oil

1/2 tsp Salt

1/2 tsp. Pepper

Water

2 Tbsp. Plain Greek Yogurt (Optional)


  1. In a blender, add all of the ingredients except for the Water and Olive oil.

  2. Turn the blender on and slowly drizzle in the Olive Oil; This will be thick and may need to turn blender off to scrape the sides as needed for the ingredients to mix together.

  3. To thin out the dressing, blend while adding water; you want to add a small amount at time; about 1 tbsp; continue to add until desired consistency. (I prefer this thicker for dipping but a bit thinner for salads.)
