Dark Chocolate Halloween Brownies

These gooey & chewy spooky brownies are the ultimate Halloween dessert. Filled with double the dark chocolate, they're rich and decadent but SUPER festive and fun! Making these for the kiddos is an easy sweet treat they'll love, BUT they are perfect for the Thanksgiving Dessert table too! You can make these all Fall season long- and trust me- you'll want to!

Ingredients:

1 1/2 Cups Flour

1/2 Cup Dark Cocoa Powder

1/2 tsp. Salt

1/2 tsp. Baking Powder

1 1/2 Cups Sugar (divided in half: Two 3/4 cups)

2 Eggs

2 Tbsp. Espresso (Optional)

1/2 Cup Butter

1/4 Cup Oil

1/2 Cup Dark Chocolate Chips

10 Halloween Sandwich Creme Cookies; crushed up into bite size pieces

  1. Preheat oven to 350°. Line a 9”x9” baking pan with parchment paper.

  2. In a medium size bowl, sift the Flour, Cocoa Powder, Baking Powder and Salt.

  3. In a small non stick pan on low heat, add the Oil, Butter and 1/2 of the Sugar (3/4 cups). Stir constantly just until Butter melts. Remove from heat.

  4. In a large bowl, whisk Eggs, Espresso and the remaining Sugar until combined.

  5. While whisking constantly, slowly add the melted Butter & Sugar mixture into the Eggs until well incorporated.

  6. Gently fold in the dry ingredient into the wet ingredients until just combined. Add Chocolate Chips. Careful; DO NOT OVERMIX or your brownies will become cake like and not chewy.

  7. Spread the Brownie mix into the Parchment Paper lined pan and top with crushed cookies.

  8. Bake for 30-35 minutes or until edges begin to crisp. For a chewier brownie, closer to 30 minutes. ENJOY!!!
