Crispy Roasted Chicken Breasts with Garlic, White Wine & Herbs

This easy Chicken dinner has so many delicious flavors, you would think it takes a long to come together but the best part is- it takes less than an hour! And BONUS, it's a one pot wonder. Using simple REAL ingredients, you create a super satisfying dish without all the fuss. I love cast iron cooking for this exact reason. (If you don't (yet) have a Cast Iron, you can definitely still cook this using a skillet and oven safe casserole dish). The Garlic, White Wine, Butter, Herbs and Mushrooms make the sauce while the Chicken finishes cooking in the oven- HOW SIMPLE?! Try serving this with Wild Rice or Mashed Potatoes and I guarantee it will become a cold weather staple in your house too. And be sure to have crusty baguette for the pan sauce!





Ingredients:


2-4 Bone In, Skin On Split Chicken Breasts (you can adjust this to one breast per guest)

1 Tbsp. Olive Oil

2 Tbsp. Butter

1/2 Cup Dry White Wine

1/2 Cup Chicken Stock

1 Cup Mushrooms (I used Shiitake and Baby Bellos but any Fresh Mushrooms will work)

4-5 Cloves of Garlic; Smashed

1-2 Sprigs of Fresh Rosemary

2-3 Sprigs of Fresh Thyme

Salt and Pepper


  1. Preheat oven to 350 degrees.

  2. On your meat cutting board; pat the Chicken skin dry with a paper towel and generously Salt and Pepper both sides of each Chicken Breast

  3. Heat the Cast Iron to medium high heat and add the Olive Oil.

  4. Once Oil is smoking hot place the Chicken skin side down and sear for about 5-6 minutes until golden and crispy.

  5. Remove from pan, immediately add White Wine, Garlic, Butter and Mushrooms. Cook for about 5 minutes on medium high heat until Garlic begins to soften and Mushrooms absorb most of the Wine.

  6. Add the Herbs, Chicken Stock and Chicken Breasts back into the pan.

  7. Roast in the oven for about 20 minutes or until the thickest part of the Breast reads at least 160 degrees on your meat thermometer.

  8. Broil on HIGH for 3-5 minutes to re-crisp the Skin of the Chicken.

  9. Remove from the oven and Enjoy!
