Christmas Holiday Peanut Butter Kiss Cookies

As you've seen before on my blog, WE ALWAYS MAKE THESE COOKIES! They are so simple, and just by switching up the sprinkles you can easily make them for any Holiday. Here is the recipe for the most delicious Peanut Butter Kiss Cookies- Sweet and Chewy with a Kiss of Chocolate, what is better than that!?




Peanut Butter Cookies

yields about 2 dozen cookies


Ingredients:


1/2 Cup Butter

2/3 Cup Brown Sugar

1/3 Cup Granulated Sugar

1 tsp. Vanilla Extract

1/2 tsp. Salt

1 Egg

1 1/2 Cups All Purpose Flour

1/2 tsp. Baking Powder

1/2 tsp. Baking Soda

Chocolate Kisses

Sprinkles


  1. Preheat oven to 350 degrees.

  2. In a Standing Mixer, combine sugar and butter on medium low with paddle attachment until light and fluffy.

  3. Add egg, vanilla extract and salt until well combined.

  4. In a large bowl, sift flour, baking powder and baking soda together and with the mixer on low, gradually add the dry ingredients to the wet ingredients until just incorporated.

  5. On cookie sheets lined with silmats or parchment paper, scoop one inch balls about 2" apart.

  6. Sprinkle with desired toppings- I like to put the sprinkles in a small bowl and roll the balls around then put them back on the cookie sheet.

  7. Bake for 10-12 minutes until the cookies begin to crinkle on top; careful not to over cook as you want them to be crisp on the edges but chewy in the middle.

  8. Remove from the oven and immediately place one kiss per cookie. Let the cookies settle after 1 minute then you can transfer them to a cooling rack. ***The kisses will take a bit to set again after being melted a bit so to speed this up just place cookies in the refrigerator if you need them to cool faster.
